My mum sent this to me. She used to make it when I was a child, having got the recipe from my nan (my dads mum I believe). She says I believe the original recipe replaces one of the ounces of flour with carob flour but I haven't tried that this time around as I don't keep carob flour now I can eat chocolate again. There must be a lot more combinations of fruits and spices you could try. The main thing to remember is that the fruits must all total up to about 500gms.

The recipe....

EGGLESS SUGARLESS FATLESS CAKE

 

Basic Recipe

Ingredients

Block of cooking dates

10 fl.oz of water

zest and juice of one medium to large orange

500g bag mixed dried fruit

7oz plain wholemeal flour

3 tsp. Baking powder

1tsp mixed spice

 

Method

Line a 2lb loaf tin with greaseproof paper and brush it with cooking oil.  Put dates and water in a saucepan and heat gently until the dates are soft and break up. Remove from heat and mash. Add all the remaining ingredients and stir well. Cook for 1½ hours at 325ºF until a skewer comes out clean.

Cool in the tin for a while before turning out onto a wire rack. Keep until next day before cutting.

 

(nb. This is an old recipe. I have to use 125 degrees C in my fan-assisted oven and only cook it for 1hr 15 mins.)

 

This is a very adaptable recipe. You can replace the orange juice and rind with any fruit juice you like. You can add an extra 2 oz of flour and 2 oz of juice to make a bigger cake. You can double the spice to make it a spicy cake rather than just ‘fruit cake’ flavour. You can reduce the cooking time by up to 20 mins to give a more ‘bread pudding’ texture. You can also use half quantities in a smaller tin as it makes a big cake but reduce the cooking time to 1 hour.

                                               

Try this combination

 

250gms of sultanas, 250gms of chopped mixed dried apples, apricots, pears & prunes (from Julian Graves) with 4fl oz of grape juice & 1oz pumpkin seeds & 1oz mixed nuts & 2tsps cinnamon

 

or this

 

250gms raisins, 250 gms of chopped mixed apricots & prunes with 4 fl oz of apple juice and 2 tsps of cinnamon

 

or this

 

250 gms sultanas, mixture of dried apples, prunes & sunflower seeds to make the remaining 250 gms of fruit, 4 fl oz apple juice & 2 tsp ground ginger

I'm going to give this a try! My gall bladder will love me for it.

I have a great recipe for fat-free fruit cake that we eat all the time if you want it. Unfortunately, it's not egg or sugar free though.
